1 large eggplant, peeled and then sliced lengthwise into thin (1/4 inch thick or less) slices or chopped up like bacon bits
2 tbsp coconut aminos
2 tbsp maple syrup
2 tbsp apple cider vinegar
2 tbsp olive oil
1 tsp chili powder
1/2-3/4 tsp smoked paprika (adjust to taste)
Black pepper and/or *Black Pepper Essential Oil to taste
*Always use Certified Pure Therapeutic Grade (CPTG) essential oil intended for dietary use
Peel the eggplant and slice the thinly lengthways or into bits, using a mandolin and/or a sharp knife. Mix remaining ingredients in a bowl, and add eggplant, making sure to coat thoroughly. Leave to marinate in the fridge for 1-2 hours. Spread eggplant on a dehydrator tray and dry for 12+ hours until crispy.
DELICIOUS on a salad with mock parmesan and kefir ranch dressing...
